Every flour, compared — and how to fake the gluten.

Gluten isn't an ingredient you add — it's a network that forms on its own when two proteins in wheat, gliadin and glutenin, meet water and get worked. Glutenin gives dough its strength; gliadin gives it stretch. Together they trap the gas a yeast or baking powder produces, which is the entire reason bread rises instead of spreading flat. Every flour below either builds that network, builds a weaker version of it, or can't build it at all — and that one fact predicts almost everything else about how it bakes.

Structure

Not all flour builds gluten the same way

Protein percentage alone doesn't tell you how strong a flour's gluten will be. Whole wheat flour has more protein than all-purpose but a weaker gluten network, because the bran physically shreds the strands as they form. Four groups cover everything below: strong (bread flour, whole wheat), moderate (all-purpose, spelt), weak (rye), and none (every gluten-free flour on this page).

Spelt is a false friend. It has real gluten and real protein, but the strands are shorter and tear more easily than common wheat's — it behaves like all-purpose flour that gives up sooner. Knead it less, proof it less, and don't expect a big oven spring.

Rye has gluten-forming proteins but almost no gliadin, so it can't build an elastic, gas-trapping web on its own — rye breads are dense by nature, not by mistake. Rye is almost always blended with wheat flour when a lighter crumb is wanted.

Oats are botanically gluten-free but routinely cross-contaminated in shared mills and fields. If gluten-free status actually matters — celiac disease, not just preference — buy oat flour labeled "certified gluten-free," not just "gluten-free" on the front.

Texture & use

Wheat and its relatives

  • Bread flour: high protein (12–14%) builds a tight, elastic web — chewy crumb, big oven spring, the default for bagels, pizza, and sandwich loaves. Swaps 1:1 for all-purpose, though cakes and cookies come out slightly chewier.
  • Whole wheat flour: bran and germ intact — nutty, faintly bitter, denser crumb, noticeably thirstier for water. Start at a 50% swap for all-purpose with a little extra liquid; a full 1:1 swap works but bakes markedly denser.
  • All-purpose flour: the generalist. Balanced protein (10–12%) gives enough structure for most baking without bread flour's chew, and a neutral flavor — everything else here is measured against it.
  • Spelt flour: sweet, faintly nutty, softer gluten that extends easily but tears if over-worked. Swaps 1:1 in quick breads and cookies; in yeasted bread, cut the kneading time and expect less rise.
  • Rye flour: earthy, slightly sour, and the thirstiest flour here (14.6 g fiber per 100 g). Cap it at 20–30% of total flour unless a dense, deli-style rye loaf is the goal.

Texture & use

Gluten-free grains, legumes & corn

  • Oat flour: naturally sweet, soft, slightly gummy from beta-glucan — tender, moist crumb, closer to cake than bread. Works up to a 25% swap for all-purpose with no other changes; past that it needs a binder (see below).
  • Buckwheat flour: not a grain at all — a seed related to rhubarb, gluten-free despite the name. Assertive, earthy, faintly bitter; the base of soba noodles and blini. Up to 30% before its flavor takes over, or 100% in pancakes and crepes where that flavor is the point.
  • Sorghum flour: the most neutral gluten-free grain flour — mild, faintly sweet, fine texture close to whole wheat. A workhorse 1:1 base for any gluten-free blend.
  • Chickpea flour: dense, beany, distinctly savory raw flavor that mellows with cooking. The highest protein of any flour here (22 g) and binds well on its own. Best in socca, farinata, and savory pancakes rather than sweet baking.
  • Masa harina: corn treated with lime (nixtamalization), which unlocks its niacin and adds real calcium that plain cornmeal doesn't have. Built for tortillas, tamales, and arepas — not a drop-in all-purpose substitute, since its starch and hydration behave differently.
  • White rice flour: fine, powdery, neutral, and gritty if underhydrated. Refined, so — unlike wheat flour — nothing tops the iron or B-vitamins back up after milling. Good for lightness and crispness in a blend, and for tempura-style batters.
  • Brown rice flour: the same neutrality as white rice flour with the bran left on — slightly nutty, slightly gritty, with more fiber and minerals. The "whole grain" half of a gluten-free blend, paired with a starch for lightness.

Texture & use

Nut & coconut flours

  • Almond flour: moist, rich, dense — almost all fat and protein, almost no starch, so it can't gel or trap gas at all. Browns fast and burns faster. Not a 1:1 swap — needs more egg for structure and a lower oven temperature; best in recipes built for it, like flourless-style cookies and cakes.
  • Coconut flour: extraordinarily absorbent — roughly 4× the liquid uptake of wheat flour, thanks to 35.7 g fiber per 100 g. Sweet, faintly coconut-scented. Never a 1:1 swap; start at 20–25% of the flour weight with extra egg and liquid, or follow a recipe written for it specifically. We recommend blending it with another flour rather than using it alone — on its own it's way too absorbent to give a recipe any real bulk.

Roots & pure starches

  • Cassava flour: the whole root, dried and ground — the closest of any gluten-free flour to wheat's behavior, with a fine texture, similar absorbency, mild flavor, and no grit. Swaps 1:1 by volume in many quick breads and tortillas, though anything yeasted still needs a binder.
  • Tapioca starch: pure extracted starch from cassava — essentially flavorless and nutrient-free. Used for chew, stretch, and a glossy, crisp exterior, not for structure. 10–20% of a gluten-free blend adds chew (think gluten-free bread or pão de queijo); as a slurry, it thickens sauces to a clean, glossy finish.

Wheat flours look artificially strong on iron and folate because U.S. mills are required to enrich white flour after refining strips the bran and germ back out — it isn't that wheat is naturally richer in them than everything else here.

Technique

Replacing what gluten does

Gluten does three jobs at once: it binds the dough together, it stretches without tearing, and it traps gas so things rise. No single gluten-free ingredient does all three, which is why gluten-free baking leans on a small set of whole-food binders instead of one silver bullet.

We highly recommend mixing a gluten-free flour with a binder — or a mix of binders — rather than using either alone. The flour alone won't hold together, and a binder alone has no nutrition or bulk to speak of; combined, you get noticeably better results on both the nutrient side and the texture and taste side than either gets you by itself.

Practical notes

  • Weigh, don't scoop. A cup of flour can vary by 20–30 g depending on how it's packed — enough to change hydration and throw off a gluten-free binder ratio, which is far less forgiving than wheat dough.
  • Gluten-free dough is a batter, not a dough. There's no gluten to develop, so kneading does nothing useful — mix just until combined, then let it rest.
  • Rest gluten-free batters 20–30 minutes before baking. Psyllium and starches need time to fully hydrate; skipping the rest is the most common cause of a gritty or gummy crumb.
  • Nut and coconut flours go rancid fast. Their fat content is high enough that room-temperature storage shortens shelf life dramatically — keep them in the fridge or freezer.
  • Almond and coconut flour brown quicker. Drop the oven temperature by about 25°F/15°C versus a wheat-flour version of the same recipe, and check a few minutes early.
  • High-protein swaps drink more water. Moving toward whole wheat, spelt, or bread flour in a recipe built for all-purpose almost always needs a splash more liquid to compensate.
  • Expect some trial and error. Gluten-free baking especially is a skill, not a formula — the same blend can behave differently depending on your flour's brand, your climate, and your oven. Don't be discouraged if the first loaf or batch doesn't come out right; adjusting hydration and binder ratios in small steps over a few attempts is normal, and it's how you land on a recipe that actually works for you.
